Delicata Squash is a Winter type squash that has an edible skin. It’s

Fresh Whole Milk Ricotta - a pint/pound. So pillowy and yummy. You can have it savory with salt and pepper and olive oil, or sweet with honey and berries. It’s best eaten within a week. If you won’t get to eating it soon enough, you can freeze it for later use. It won’t have quite the same texture after you thaw it, but it will be good for cooked dishes. Aged selection this week is Aquilla, our aged jack-style. Great for nachos or stuffed peppers or grilled cheese with tomato soup.
Next week I will send along another square of First Snow Camembert if it’s ripe, otherwise I’ll wait a week and probably send cheese curds

On the Farm.

very little to no rain here for the past 6 weeks, but we did squeak out a couple of short, more meaningful, showers this week. Which, this time of year goes further than in the summer because the sun is less intense and not up as long. Trees are changing mostly due to drought stress, but also because it’s time. 5 more weeks of the main season CSA and we will switch over to our online farm stand for winter sales. If you haven’t checked that out, you should www.turniprock.com; online farm stand. We have seed garlic and canning tomatoes for sale in it now, so if you plant a garden we can get you some big seed stock, and if you are putting up tomatoes the next two weeks will be prime. we can deliver with your box. we have some nice fall greens,brussels and salad turnips coming for the final weeks.

Cosmic Wheel Creamery Cheese shares.

This week we have some feta and the aged cheese is Moonglow, our alpine style. The Moonglow is a good melter and makes a nice cheese sauce. I love the feta on pizza or salad.

Next week cheese will likely be ricotta and an aged cheese.

Freezing Sweet Corn: shuck it, cut it off the cob, and freeze it in quart size freezer bags. We used to blanch it, but froze some without blanching it one year and found we couldn’t tell the difference between the corn that was blanched and the corn that wasn’t, so now we skip the extra step!

Creamy Grilled Corn and Feta Pasta - this recipe calls for scallions and fresh basil, but you can substitute onions and fresh parsley for an equally delicious dish! Our basil got powdery mildew this year, so it’s missing from the CSA this season.

Apologies! I am having computer issues and can’t add pictures.

We are experiencing weather whiplash and the kids are back in school, so we are adjusting to the new schedule. Our delivery driver for the season also drives school bus which means he’s done driving veggies around and back to driving kiddos! So you will see your cheesemaker dropping off CSA boxes again! I’m also sending delivery emails from the road and definitely not as fast at loading and unloading as Kenny when I’m on my own, so your box might show up a little later than it had been.

Josh made the scorched corn soup recipe that was in last weeks blog for dinner and it was fantastic! Super nourishing and delicious. It’s nice that it’s not so hot that it’s keeping us out of the kitchen!

We will have one more Sunday Sundae celebration this year on September 24 from 1-4. Hope to see you then!

This week we have some Deneb, which is really yummy and creamy. Excellent for snacking or for cooking.
And some fresh mozzarella. I only make this one once a year. It takes a ton of time to make the curd and then to pull it all by hand and package it up. I split it into two days of work instead of trying to get it all done at once this year. Wise choice so i didn’t end up in the cheese room at midnight this go-around! It goes super well with tomatoes and olive oil and balsamic vinegar. It’s best eaten sooner than later, so dig in!

I’ve been reading The Sentence by Louise Erdrich and in it, there’s this which I think counts as a recipe because it sounds so delicious:
"Pollux called out. ‘I’m making your scorched corn soup recipe, remember?’
For the past year, Pollux has been perfecting my favorite soup ...—it is a corn soup. First he caramelizes fresh-cut sweetcorn, toasting it slowly in a heavy pan, adding onions. Then cubed potatoes tossed lightly in butter, to set a crisp. He adds all of this to a garlicky chicken broth with shaved carrots, cannellini beans, fresh dill, parsley, a dash of cayenne, and heavy cream. The scent was making me delirious." (p. 105-106)

We had a great time at Sunday Sundaes! Thanks to Fiddlehead Kitchen for making such yummy food and to all who came out! If you missed it, we will have one last Sunday Sundae this season on September 24.

We are noticing some red leaves at the tops of some of the trees. Temperature swings in full effect, though. But the kids are back in school and Josh has found enough ripe squash to make the annual happy birthday pies for me (Rama). So we know summer is winding down! That means spinach is on the way again! And no more zucchini! And only one more week of sweet corn! Phew! Till then!
