This week we have some feta and the aged cheese is Moonglow, our alpine style. The Moonglow is a good melter and makes a nice cheese sauce. I love the feta on pizza or salad.

Next week cheese will likely be ricotta and an aged cheese.

Freezing Sweet Corn: shuck it, cut it off the cob, and freeze it in quart size freezer bags. We used to blanch it, but froze some without blanching it one year and found we couldn’t tell the difference between the corn that was blanched and the corn that wasn’t, so now we skip the extra step!

Creamy Grilled Corn and Feta Pasta - this recipe calls for scallions and fresh basil, but you can substitute onions and fresh parsley for an equally delicious dish! Our basil got powdery mildew this year, so it’s missing from the CSA this season.

Apologies! I am having computer issues and can’t add pictures.

We are experiencing weather whiplash and the kids are back in school, so we are adjusting to the new schedule. Our delivery driver for the season also drives school bus which means he’s done driving veggies around and back to driving kiddos! So you will see your cheesemaker dropping off CSA boxes again! I’m also sending delivery emails from the road and definitely not as fast at loading and unloading as Kenny when I’m on my own, so your box might show up a little later than it had been.

Josh made the scorched corn soup recipe that was in last weeks blog for dinner and it was fantastic! Super nourishing and delicious. It’s nice that it’s not so hot that it’s keeping us out of the kitchen!
