Notes on the box

Store squash and tomatoes outside of the fridge. Remove tops from turnips before storing. The tops and the roots are edible.
Skins of the buttercup squash are edible. We had it seeded, diced, and then roasted with a little oil and salt and pepper and it was delicious!
We have just a few apple trees that are producing (and a few more that will in years to come) and we included a couple of apples from our trees. They are really yummy and we hope to send more in the years to come!
We got a significant frost that looks like finished off most of the warm weather loving crops. This is likely the last of the tomatoes!
We have some fall crops still coming. Cauliflower and will have frost sweetened greens now. They taste the best!

Cosmic Wheel Creamery Cheese Shares

This week we have cheese curds and Arcturus, which is what happens when the cheese curds are pressed into a wheel and aged. Curds are part of the “cheddaring” process of making cheddar cheese. It’s quite a challenge to press the curds together into a wheel, which is why some flaws near the rind occur when the curds don’t knit together completely. This is normal for cheddars that are made by hand and not by industrial means. Sometimes the flaws include some wild blue so you get a taste of blue cheese!

Curds and Arturus are both excellent with chili or a hearty veggie soup. I like to drop some curds on top with a sprinkle of cilantro before serving.

What’s in the box?

Notes on the box.

Butternut squash should be stored out of the fridge. It will keep for a long time, so you can use it as autumn decor for a while if you like. But' it’s also super yummy, so you might not be able to hold onto it for too long.
Tomatoes and onions should also be stored outside if the fridge
Remove tops from carrots and beets for storage.
The greens mix isn’t lettuce based, but some nice hearty mizuna, totsoi, and baby kale that has a nice flavor and holds up well to salads with heavy dressing or roasted beets and toasted nuts.

This week we have Feta and Cygnus, which is our aged swiss cheese. We don’t have the perfect aging conditions to make nice smooth holds in the wheels, but it still has the nice swiss flavors.
The feta is great in a salad or on a pizza with the arugula or greens mix!

Notes on the box.

Delicata squash! One of our faves around here. Store outside of the fridge. The skins of delicata are edible. Its great cut in half lengthwise, remove the seeds, then cut into cresent moon shapes, toss with olive oil and spices of your choice, and roast in the oven till carmelized and tender. You can then add to a salad, drizzle with pesto or chimichurri.
You have what you need for a good Mirepoix aka the Holy Trinity in Louisiana (where Rama grew up) cooking. A great flavor base to begin a gumbo, ettouffee, or jambalaya!

Nice helping of tomatoes. Time for fresh salsa, tomato soup, or sauce.

This week we have all you need for a lovely pasta dish. Some fresh whole milk ricotta and a grana style cheese for grating on top of your favorite pasta (or on your favorite roasted veggies)! I love ricotta on toast with a drizzle of good olive oil and some salt and pepper. It’s also good with honey and nuts.

Roasted Delicata Squash with Cilantro Chimichurri

Veggie Jambalaya - with this recipe, I think doubling the celery and tomato would be a good bet! And adding some andouille sausage if you have some!

On the Farm.

Big big big thanks to the farm crew for covering all the daily chores and watching over the farm so we could take our trip to Madeleine Island! We realized we hadn’t left the farm for an overnight since the organic farming conference in February. Hadn’t even gotten our park pass this year! It was a much needed break. I think I responded to anyone who might have had any delivery issues last week, but if I missed you, please reach out again.

The nights are getting chilly over here! We are pulling in the winter squash and planting spinach and heart greens in the hoop houses. Applying for Winter farmers market dates…. Still lots of good veggies coming though!
