What’s in the box?

Notes on the box.

Be sure to remove greens from radishes for storage. The chard and lettuce will store best in a plastic bag. The rainbow chard stems are edible! You can chop them and cook them before the leaves since they take a little longer to cook than the leaves.
Napa cabbage is another fantastic stir-fry food! Or if you want a cooking project, you can make it into filling for dumplings.
Are they scallions? Spring onions? Green onions? Here at Turnip Rock we call them Grunyuns and we like to put them on everything!
The rhubarb is from our friends at the farm formerly know as Sleepy Root. They have stopped running their CSA, but they still have a nice big patch of rhubarb. We went to a potluck last weekend and there were 5 rhubarb desserts! Otto made shortbread with rhubarb compote last night and it was great!

Cosmic Wheel Creamery Cheese.

This week we have our cows milk feta and Antares, our cows milk manchego. Both are big strong flavors. We love the feta on pizzas and in quiches. The Antares is great for a cheese plate or shredded on some scrambled eggs with chopped green onions.

On the Farm.

Thanks so much to everyone after the first delivery! It went pretty well with minimal mix-ups. Hooray! As always, take the box with your name on the label and only take cheese if you have cheese share highlighted on your label and in the cheese box. And of course, let us know if we missed anything in your box or if there’s any problems and we will do our best to fix it!
We’ve been happy to get some rain right on time! Planting, picking and packing, and lots and lots of weeding going on! Otto and Sadie are now home from school and have been helping out in the fields.
Do you want to come and visit the farm and see where your food is coming from? We would love to have you visit on July 16 as part of the Coop Farm Tour! Mark your calendar! We will be giving guided tours every hour on the hour as well as self guided tours whenever you like. We will be grilling burgers or brats, have the farm store open for you to pick up some groceries, and we would love to meet you! Check out the Coop Farm Tour website to see the other farms that are also open and for more information. Also, if you come, make sure to let us know that you are a CSA member!

Week 1; June 9, 2022 First delivery!

welcome to Turnip Rock CSA!

Happy first delivery day! We are happy to be getting the veggies out to you again this season after a very cold April. We hope you are excited about having salads with every meal this week! A reminder that when you pickup, you should take the box with your name on the label. If you don’t have a box with your name on the label and you didn’t schedule a hold, please contact us and we will make it right! We make mistakes sometimes, but we will always correct them. Sometimes there’s a mixup at the dropsite, we do our best to correct those as well! If anything comes up (like your share is missing an add-on that you ordered) please let us know!

We re-use boxes! You can either take the whole box and return it the following week when you pick-up, or you can transfer veggies from your box to your own container and leave the box at the drop site for us to pickup on next delivery.

We will do our best to get your share delivered at a consistent time each week. Things do come up that make us run a little late… traffic, delivery mixups, or checking on an injured animal before leaving the farm (that happened today). We do send an email when we get to your dropsite, that’s the best way to be sure your share has been delivered. If you have questions or concerns, contact us and we will do our best to respond quickly.

Notes on the box.

Herb pots contain a combination of parsley, sage, thyme, and oregano. You can pot the herbs out into larger containers or into your garden. Or you can keep them in a sunny window and water them regularly and pinch what you’d like for fresh herbs as needed. Fresh herbs are a great addition to salad dressings and minced and added to finished food for a nice bright flavor.

Lettuces and greens will keep best in a plastic bag in your crisper in the fridge.

Remove the green tops from the radishes for storage. Radish tops are edible! We like them best added to other greens like the kale or spinach. If you make a pesto, adding radish tops is a great idea!

The Spinach is young and tender. Great fresh or mixed into hot pasta where it will cook from the residual heat.

Cosmic Wheel Creamery Cheese Shares.

If you ordered a cheese share, you will have a yellow highlighted line on your veggie box label that says “cosmic wheel creamery cheese”. This is a quick way for you to know if you have cheese to pick-up or not.

Cheese shares are packed in a separate box from veggies. It will be at the drop site with a label that says CHEESE. The box has a liner and freezer pack to keep the cheese cool. Please take only your share (one bag of cheese) and not the entire box! There’s a list inside the box with the names of people who have ordered cheese shares. If your name isn’t on the list, please don’t take cheese. Please close the box after getting your cheese. If you should have gotten cheese and there’s none there or your name is not on the list by mistake, please let us know and we will make it up to you.

I’m starting off the season with two favorites, Circle of the Sun, and aged raw milk cheese that’s an original recipe to the farm. And Garlic Dill Quark. Quark is a German style of cheese made in a similar way to chevre, but made from cow milk instead of goat milk. It’s great of crackers, but you can also have it with scrambled eggs or on bread with sliced radishes. Yum!

Recipes

What to do with bok choy?! We love it chopped and added to a stir-fry toward the end of cooking so that it keeps some of its crunch. Here’s a quick recipe to let it shine on it’s own:

Quick Pak Choi

  • 1 tablespoon vegetable oil

  • 2 cloves garlic - minced

  • fresh minced ginger

  • 1 pound bok choy - halved or quartered lengthwise

    1 tablespoon soy sauce

  • 1 teaspoon sesame oil

  • 1 teaspoon crushed red pepper - optional

  • Add the oil to a large wok or skillet over medium-high heat. Swirl to coat the entire surface of the pan.  Add the garlic and ginger, stirring continuously for 1-2 minutes, or until fragrant.

  • Add the bok choy, soy sauce, and sesame oil. Toss to coat and cover. Cook for 1-2 minutes, uncover and toss, and then cover and continue to cook until bok choy is cooked to desired doneness (approximately 3-5 minutes more).

  • Sprinkle with crushed red pepper and serve immediately. Enjoy!

Radishes! What to do with radishes? Have you had sliced radishes on a baguette with some butter and salt or even better with some Cosmic Wheel Creamery Quark? It’s my favorite thing to do with radishes. Also great is having sliced radishes in a salad (you can add them to potato salad for extra crunch and flavor.
roasted radishes: Wash radishes, remove the greens, and slice in half. Mix with some olive oil, 1 grated garlic clove, and kosher salt. Place on a parchment-paper lined baking sheet. Roast until fork tender, about 20 minutes, at 450 degrees Fahrenheit. The exact timing depends on the size of the radishes. Add some minced fresh dill or parsley and enjoy as a side.

On the Farm

It was such a cold April! It really set things back and we appreciate your patience as we had to delay the first delivery. May was better and June is great so far! Veggies are looking great and things are growing beautifully. In May we welcomed students from Lucy Laney Elementary to our farm to learn about seeds, veggies, cheesemaking, cows, lambs, bees, and reptiles! It was such a great time and we wanted to extend a big THANK YOU to our CSA members who contributed to the fund to help get the students out to the farm. It was a perfect way to start the season and we had the best weather. Other than that we’ve been glad that the weather turned around and that we have a really fantastic farm crew! Looking forward to harvesting all season long and bringing you delicious local food!

Week 22; October 28, 2021 Final Delivery!

It’s the last CSA delivery of the season! We hope that you have enjoyed the veggies this year!
The storage cabbage will keep for many weeks in your fridge. You can let it roll around back there until all your fresh veggies are eaten up. We like it in soups and stews, but it’s also good shredded up and used as a fresh side to a spicy curry or with tacos.

Cosmic Wheel Creamery Cheese Shares.

Antares, our punchy cow’s milk manchego to open up your sinuses! And a first for me to try….. Shredded Cheese! This is a mix of a few different aged cheese. IShredded cheese doesn’t keep for very long, so use it up quickly! It’s truly next level on roasted Brussels sprouts.

Roasted Brussels Sprouts - some people might say that there are other ways to prepare Brussels Sprouts. I don’t know that I believe them.

On the Farm.

Wrapping things up! This season has been our second most challenging, but we hope you haven’t experienced too much of that through your CSA shares. We did our very best to make sure boxes were as abundant as possible even though some crops were lost to drought, high temps, and not being able to get everything done.
Next week sees Josh and Magdalen doing field cleanup, finishing harvesting some storage crops, and making sure we are ready for the ground to freeze. It’s been nice not to have to scramble this season, if disconcerting because of the very warm fall. We will continue to milk the cows and make cheese as long as there’s grass to eat and the cows are making milk.
While spending next week cleaning up, we will also be prepping for our Winter home deliveries. We will re-open our online farm stand the second week of November and you will be able to order meat, veggies, cheese, and more for delivery to your home! We will also be attending the Mill City Farmers Market for all of the Winter market dates before the new year.
We’ve had several people asking about signing up for a CSA share for next year. We are so glad to hear that you are with us! We will open sign-ups for the 2022 season in January or February. We will be sure to let you know as soon as they are available!

We are so grateful for the support of our CSA members! You are truly the reason that we are here and we couldn’t do it without you! We hope you are able to keep eating local foods as much as possible through the Winter and that everyone has a good holiday season and stays warm and full in all the ways through the Winter.
