New this week is Brussels Sprouts! We have been waiting for some cool weather becasue they tatse so much better once they have been through a frost. We finally got a few cool eveningsl and they are quite yummy!

Napa Cabbage is really yummy in a soup or stirfry and also makes a good slaw. Both sprouts and napa should be stored in the fridge.

Cosmic Wheel Creamery.

Aged cheese this week is a year old raw milk jack style cheese. Fantastic melted on roasted brussel sprouts on stuffed squash. The fresh cheese is our feta to pair with the spinach in a salad or on a pizza!

On the Farm.

This is the second to last delivery week of our 2021 delivery season! Next week will be the last week that we are making deliveries! If the label on your box has a message that says LAST BOX and you want to add the last delivery, you can do that by going to your dashboard and clicking the link to add deliveries. Let me know if you have any questions.

If you have a meat share, your final meat delivery will come next week! Make room in the freezer!

After our main season CSA ends, we will resume our online farm store orders and home deliveries. We generally deliver twice per month. We are working on some gift ideas for the holidays. A link will be sent to everyone and you’ll have the option of buying meat, cheese, storage veggies, and other goodies from friends of ours (plant medicines, coffee, hot sauce, and more!) We will let you know when the online store is open.

Notes on the box

Black Futsu Squash is a beautiful heirloom squash from Japan that we started growing several years ago. It is one of our favorites! It’s so beautiful and the flavor is really great, too. It can be roasted and stuffed, or it can be cut into half moon slices and roasted on a sheet pan. The skin is edible. It stores best out of the fridge and should last at least a month.

I tend to not peel beets when I roast them, especially not small ones. Remove the long tail, the top most part, then halve, quarter, or cut to smaller pieces and roast them! You can start with foil over the pan to kind of steam them first, then take off the foil to get the nice brown bits.


Cosmic Wheel Creamery Cheese Shares.

Garlic Dill Quark and Deneb, our aged gouda-style cheese. Try the Garlic Dill Quark as a veggie dip for the carrots or with roasted squash. It’s also really wonderful on crackers or on a bagel.

Recipes.

French Lentil Salad with Goat Cheese and Roasted Radishes - recipe calls for arugula, but you can use salad mix, chopped radish greens, and spinach. If you have a cheese share, you can try the quark in place of goat cheese.

Carrot Ginger Soup

Tahini Sauce for Roasted Veggies - Goes great on roast squash, carrots, turnips, radishes, potatoes… anything!
Mix 4 tbsp tahini, 3 tbsp lemon juice, 1 small pressed/ minced garlic clove, 1/2 tsp salt, pepper. Thin to desired consistancy with water. Use as a drizzle on the veggies or make thicker for a dip.

On the Farm.

Some folks deliveries are wrapping up! If your box has the LAST BOX message on it and you feel that there’s an error (if you did schedule a hold and it didn’t go through) or any other mix-ups, please contact us! You do have the option of adding more deliveries! Go to your dashboard and click where it says “schedule more deliveries” and you have the option of getting boxes delivered for the remainder of the season. Let us know if you have any questions.

Remove tops from carrots for best storage.
Skins of delicata squash are edible. Skin of buttercup squash is edible, but if you got a “warty” one, you might want to cut those off before preparing it. The warty ones are so pretty! It will keep for at least a month if you’d like to save it as a fall decoration before eating it.
Store potatoes in a dry, dark area in a paper bag.
The skins of hakuri turnips are thin and edible and great fresh or cooked. The greens are also edible. We like to sautee the diced turnips and then when they are tender, add the greens to wilt in the pan and serve all together.

Cosmic Wheel Creamery Cheese Shares.

Lyra, is a nice creamy mild cheese. It’s one of the younger aged cheeses that I’m sending this season and was made in late May of this year. A taste of Spring before the cool weather comes again! And fresh cheese cureds! Have you tried adding them as a garnish to a nice bowl of chili of lentil soup? I really lvoe them that way.

Miso Roasted Hakuri Turnips - Some of the turnips have gotten big, but they are still very yummy! You can still use the recipe, just cut the turnips into smaller pieces.

Chicken and Mushroom Fricassee with Creamy Turnips - just in case you are feeling fancy :)

On the Farm.

We had the really fun experience of having Otto’s class out to the farm for a visit. We had three learning stations where kids were able to learn about cheese making, livestock on the farm, and vegetable growing. Then the kids all pitched in to help out with bulk harvesting beets. It was really fun and we really enjoy having kids out here!
