What’s in the box?

Notes on the box.
This week you got a big helping of garlic scapes. Enough to make a nice garlic scape pesto or aeoli. They are also fun to grill. They will last a few weeks in the fridge or can be pickled, so you can also just add them to tuna or other protein based salads as well as pasta salads.
Green top beets are here! Same as green top carrots and salad turnips, you will want to remove the tops from the roots for storage and both are edible.

Cheese curds again! I know they are a big favorite for snacking around here, so I hope you don’t mind two weeks in a row of them!
The aged cheese this week in Lyra. This one is creamy and has fruity notes from the rind being washed in red wine several times during the aging process. It’s lovely just on a cheese plate or charcuterie board, but it also is super melty on a burger or in a grilled cheese.
Recipes.
Garlic Scape Pesto - Packs a punch! Put it on pasta, pizza, or sandwiches. It freezes well, too! Feel free to substitute walnuts, almonds, or even sunflower seeds for the pine nuts in the recipe.

On the Farm.
Alright! It’s happening this Saturday, July 16! The Eat Local Coop Farm Tour. Our farm will be hosting from 10-4. We will have guided tours/ hay rides every hour on the hour. Self guided tours anytime, you are free to explore! We will be grilling burgers and brats. The Farm Stand will be open with veggies, meat, and cheese for sale. Don’t forget to bring a cooler to bring goodies home! Come see the cows and the veggies and your farmers! There are so many great farms that will be participating in the farm tour in our area.
